Recipe: Avocado, Lemon & Dill Zoodles
As a resident of Los Angeles, I have an automatic need to eat avocados every way I possibly can. I’ve mastered the avocado toast (and it is offered in every café worth visiting) so now it’s time to get creative and make some dishes with an avocado flair!
One of my favorite creative & healthy ways to cook at home is turning zucchini into noodles (aka, "zoodles.") I usually mix these through my regular pasta noodles to incorporate more veggies into my meals. After creating this dish a few times, I decdied I wanted to change things up and get a
little more creative with the Zoodle. I simply added dill to create this fresh and easy summer dish with an avocado herb dressing. Try it out and let me know what you think!
- 2 large zucchinis
- 1 lemon
- 1/4 cup of chopped dill
- 1 avocado
- 3 tsp of olive oil
- Salt and pepper to taste
Mix avocado, dill, lemon juice and olive oil in a food processor until fully blended. Once blended, add salt & pepper and re-blend to taste. Wash, peel and spiralize the zucchinis – I included a link below to the spiralizer tool I use. In a large bowl, thoroughly mix the avocado sauce with zoodles.
Serve and enjoy!
I roll up my sleeves and mix this with my hands. I've also found that this dish is best to serve within a few hours. If you want to save it for later, keep the sauce separate to the zoodles and mix together when you're ready to eat.
